Router and data package for mobile CCTV in a food van?

I’m installing a 4 camera HiK system into my food van. I now need to choose a router w/ external antenna, and data package to support it and the HiK vision app to view remotely.

Do I really need industrial grade router? And how much data for approx 10 hours open every day?
